I was lucky enough to be gifted some gorgeously delicious and nutritious vegan protein powder blends from Prana Protein. Although of course they make a perfect smoothie or shake, I am such a bakaholic that I just had to create a banana bread using their organic chia sees, hemp protein and chocolate pea protein blend.

Behold - Pranana Bread! :)

Super healthy and fully plant-based, this banana bread is a perfect mix of carbs and protein – perfect for a breakfast on-the-go or a fabulous post-workout snack.
Ingredients:

  • 1 tbsp Prana Organic Chia seeds

  • 3 tbsp water

  • 3 very ripe bananas

  • 135g soy or coconut yogurt

  • 140g coconut sugar

  • 2 tbsp coconut oil (melted)

  • 1 tsp vanilla extract

  • ½ tsp almond extract

  • 1 tsp cinnamon or nutmeg

  • 50g dairy-free chocolate chips

  • 80g whole wheat flour

  • 25g Prana Organic Hemp Protein powder

  • 2 scoops of Prana Protein Chocolate Blend (Soya protein & pea protein) 

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 extra banana to slice on top

Method:

  1. Preheat your oven to 350°F/ 180°C/ Fan 160. Lightly spray or line a 9-inch loaf tin.

  2. In a small bowl mix the chia seeds and water together, and set aside to make a chia egg.

  3. In a medium-sized bowl, mash the bananas with a fork. Add the yogurt, sugar, coconut oil, vanilla, and almond extract, and mix until combined. Add the chia egg.  

  4. In a separate bowl, mix together the flour, protein powder, chocolate chips, baking soda, and salt, then stir into the banana and yogurt mixture.

  5. Pour into the greased tin and top with sliced banana and sprinkle with a little coconut sugar.

  6. Bake for 50 to 60 minutes, until a crust has formed on top and a toothpick inserted in the middle comes out dry.

  7. Remove from the oven and set aside to cool. Once cooled, slice up and enjoy!
