Overnight Oats

SERVES 1

The idea here is that if you prepare this before bed then you can just grab it out of the fridge first thing. Soaking the oats also makes them more easily digestible.

BASIC INGREDIENTS

1 bowl or regular jam jar

½ cup of oats

½ cup of milk or Greek yogurt (or dairy-free milk)

1 tbsp of chia seeds

POSSIBLE ADDITIONS TO THE MIXTURE:

1 tbsp of peanut butter / almond butter / jam

½ an apple – grated

a handful of berries

1 kiwi – chopped

1 tsp of cinnamon

a handful of raisins / cranberries / walnuts

1 pear – chopped

zest of half an orange

a handful of dried fruits such as rasions or cranberries

1 tsp of honey or agave nectar (if you prefer it sweeter)

METHOD:

1.     Stir the oats and milk with the chia seeds (as well as any seeds, nuts or fruit you like) in a jar or bowl until well combined.

2.     Add a bit more milk or water to make sure the mixture is quite runny (it will thicken up as the chia seeds soak up the moisture overnight).

3.     Place in the fridge in a sealed jar or cover the bowl in cling-film.

4.     In the morning/whenever you want to eat it, take it out of the fridge and add any other toppings you fancy – perhaps some honey, or fresh fruit, or some sliced banana.
